Palate: Beautifully smooth, spicy (ginger). The woody notes and smoke are less pronounced. Musk.

Each upcycled French oak barrel begins its journey hand-shaved, reopening the grain to breathe and exchange with the whisk(e)y. Once home to high-end wines and spirits, these noble barrels offer full traceability from tree to glass. As the open flame dances for 90 minutes, it releases aromas of vanilla, toasted nuts and gentle spice, which meld with the warmth of the oak, carrying you to a moment of quiet refinement—like sitting by a crackling hearth. After decades of refining their craft spirits in Missouri, Aris & Marianna Aristidou decided to make their own Ulyssean journey, bringing home their expertise and combining it with local ressources, such as the Kythrea barley. Together with the Ascend Spirits team, Elysia - blissful in Greek - was born : the first premium Mediterranean whisky. It embodies the sweet taste of heaven after a long journey back home.
